Po-tat-oes. You know: “Boil ‘em, mash ‘em, stick ‘em in a stew.” And sweet potatoes! Who doesn’t love sweet potatoes? They’re basically vegetables disguised as dessert. And they’re healthy!

Sweet potatoes are loaded with antioxidants and anti-inflammatory nutrients. In some studies, research suggests that sweet potatoes actually have stronger levels of bioavailable beta-carotene than dark, leafy vegetables that don’t taste nearly as good.

They’re loaded with vitamin A, and they lower the risk of oxygen radicals as they pass through our digestive system. Even though they taste sweet, eating them can also improve the regulation of our blood sugar! Type 2 Diabetes patients can eat sweet potatoes and see improvements to their blood sugar levels.

So, why the lecture on sweet potatoes? Well, you might want to consider growing your own cultivated sweet potatoes at your bug out cabin.
