Our ancestors have been figuring out ways to preserve meat and other foods for generations. By prolonging the life of their food stores, they were able to spend less time hunting and more time exploring the world they lived in and developing more sophisticated tools, inventions, and begin building their society from the ground up. Looking at it this way, we pretty much owe everything we have to the development of smoked and dried meats.

Today we can experience the flavor of smoked meat any day of the week by simply heading to the grocery store or gas station and picking up a bag of jerky. However, if we could no longer rely on that being the case, we would want to stretch our meat rations out as long as we could.
